1 tsp Dried yeast
1.333 cups flour
0.333 cup Corn starch
2 Tbsps powdered sugar
3 eggs
½ cup butter
½ cup pink Praline (crumbled)
softened butter (for the moulds)
flour (for working the dough)
1 egg yolk

Preparation steps

1.
Dissolve the yeast in 2-3 tbsp lukewarm water. Cover and leave for around 10 minutes to start working.

In a separate bowl, mix together the flour, cornflour, sugar, eggs and a pinch of salt. Add the yeast solution and knead all the ingredients to a homogeneous dough that comes away from the side of the bowl. Add a little flour or water if needed. Leave for a further 1 hour to rise.

Knead in the butter and pink pralines, then leave to rise again, for a further 30 minutes.

Heat the oven to 200°C (180°C in a fan oven), 400°F, gas 6. Grease 12 brioche moulds with butter and dust with flour.
5.
Divide the dough into 12 equal-sized pieces, shape into balls and place in the moulds. Leave to rest for around 10 minutes.
6.
Whisk the egg yolk with 1-2 tbsp water and brush over the brioches. Bake in the oven for 15 minutes. Leave to cool completely before serving.
