1 Charentais melon
3 Tbsps honey
1 whole Lime (juiced)
4 Goat cheese about 50g (approximately 2 ounces)

4 halved Limes

Preparation steps

Slice the melon in half and remove the seeds. Cut each half into thin slices and remove the skin from each piece. Arrange the slices into a decorative, fan-shape on the plates. Whisk the honey with the lime juice and warm slightly in the microwave.

Preheat the oven's broiler to low.

Brush the goat cheese with olive oil and season with freshly ground pepper. Place on a baking sheet lined with parchment paper and broil for about 3 minutes, watching closely so it does not burn. Place the goat cheese on top of the sliced melon, drizzle with the warm honey mixture and garnish with lime slices.
