- 400 grams day-old White roll
- 400 milliliters milk
- 1 onion
- 1 Tbsp butter
- 2 Tbsps freshly chopped parsley
- 4 eggs
- 75 grams Semolina flour
- salt
- freshly ground peppers
- Nutmeg
- 1 Tbsp butter (for the towel)

Preparation steps
1.
Cut rolls into about 1 cm cubes (approximately 1/2inch). Bring milk to a boil and pour over bread. Let stand for about 10 minutes.

Peel onion and chop finely. Heat butter in a pan and saute onion until translucent. Add parsley and mix well. Add mixture to bread. Add eggs and flour, season with salt, pepper and nutmeg. Knead well into malleable dumpling dough. If necessary, add more flour.
3.
Brush wet kitchen towel with butter in the middle and place dumpling dough on top. Shape into a roll and roll up towel. Tie the ends, leaving some room. Bring water to a boil and cook for about 40 minutes on low heat.
4.
Lift towel from the water and let rest briefly. Unwrap and slice dumplings. Serve.
