4 ozs sugar
1 Tbsp lemon juice
18 ozs Greek Yogurt (0.1% fat)
3 ⅗ ozs Whipped cream
1 tsp vanilla extract
mint (for garnish)

Preparation steps

1.

Rinse the blueberries and mash with approximately 1 ounce of sugar and the lemon juice. Cover and chill for about 2 hours in the refrigerator.

Mix the yogurt, heavy cream, vanilla extract and the remaining sugar. Stir about half of the yogurt mixture into the blueberries. Fill popsicle molds with the yogurt mixture and blueberry mixture in layers or just one type in each and freeze for about 45 minutes. Insert popsicle sticks and freeze completely.

Warm the molds slightly with warm water and carefully release the popsicles. To serve, arrange on top of a dish of ice cubes and garnish with mint leaves.
