400 grams Mangoes (peeled, pitted and chopped)
100 grams sugar
1 Lime (juice and zest)
1 very fresh egg white
Plastic Containers (with stalk)
Wooden stick (available at drug stores)

Preparation steps

1.

Puree chopped mango in a blender and strain through a sieve.

Boil sugar with 4 tablespoons water until syrupy, then let cool. Mix syrup with mango puree, lime juice and zest. Beat egg whites until stiff, then fold into mango puree. Pour mixture into a shallow metal pan and freeze, stirring with a fork occasionally to prevent large ice crystals from forming.

3.

When mixture is about half frozen, transfer to cups, insert popsicle sticks and freeze 2-3 hours more.
