Preparation steps

1.

Cut blood sausage into slices. Peel onions and cut into thin rings. (To mute the pungency of the onions, blanch briefly in boiling water, if desired).

2.

For the dressing, whisk all ingredients together, season to taste and stir in onions. Let marinate about 30 minutes. Place blood sausage on a platter and drizzle with onion dressing. Let marinate 15 minutes more. Season with pepper and serve.
