- For the potato chips
- 4 starchy potatoes
- 400 milliliters vegetable oil (for frying)
- salt
- For the tartare
- 500 grams Ground steak (for tartar) (freshly prepared by the butcher)
- 1 tsp Caper
- 2 Pickled cucumbers
- 1 onion
- 4 sprigs parsley
- 1 tsp sharp Mustard
- salt
- freshly ground peppers
- ground paprika
- 4 fresh egg yolks
- olive oil

Preparation steps

For the potato chips: Peel and rinse the potatoes, and thinly slice. Place the potato slices on paper towels to dry. Heat the oil in a deep-fryer or saucepan and working in batches cook the potatoes until crisp and golden brown. Remove with a slotted spoon and transfer to paper towels to drain. Repeat with all of the potatoes and season with salt.

For the tartare: Chop the capers and the pickles. Peel and finely chop the onion. Rinse the parsley and shake dry, pluck some leaves for garnis
