- 800 grams Beef fillet (trimmed)
- salt
- freshly ground peppers
- 2 Tbsps vegetable oil
- 40 grams chopped almonds
- 80 grams mixed Fresh herbs (such as chives, parsley and cilantro leaves)

Preparation steps
1.
Preheat the oven to 120 ° C upper and lower heat.
2.
Rinse and pat dry meat. Season with salt and pepper. Heat oil in a pan and sear meat on all sides, remove from the pan. Arrange meat on a wire rack (place dripping pan inderneath) and cook meat in preheated oven at 120°C (approximately 250°F) for about 40-50 minutes, depending on meat thickness. Internal meat temperature should reach 55-60°C (approximately 130-140°F).
3.
Toast almonds in a dry pan until golden brown. Remove from pan and let cool. Rinse herbs, shake dry, pluck off leaves and chop finely. Mix with almonds and spread mixture on a plate.
4.
Remove meat from the oven and roll in herbs.
5.
Slice meat and serve.
