- 4 ½ lbs Ribeye Steak (with bone)
- salt
- freshly ground peppers
- 2 Tbsps olive oil
- 1 handful fresh mixed Fresh herbs (i.e. tarragon, rosemary, thyme)
- 4 ozs butter
- 5 Tbsps seasoned breadcrumbs
- 2 egg yolks
Preparation steps

Preheat the oven to 160°C / 350°F.

Rinse meat, pat dry and season with salt and pepper. Heat oil in a pan, sear roast beef on all sides and then place in a roasting pan with a drip tray. Place in oven and cook for about 45 minutes.

Rinse herbs, shake dry, pluck and finely chop. Mix butter in a bowl with breadcrumbs, egg yolks and herbs and knead into a smooth paste mixture. Cover roast beef in herb mixture, press firmly and cook for 10-15 minutes. Serve sliced.
