150 grams baby Spinach
400 grams Cherry tomatoes
500 grams Beef fillet
2 Tbsps olive oil

2 Tbsps Sour cream (40 grams)
130 grams Yogurt (low-fat)
1 Tbsp Mayonnaise (15 grams)
1 Tbsp lemon juice
1 pinch sugar

Preparation steps

1.

Rinse green beans, cook in boiling salted water for 8 minutes. Drain, rinse with cold water and drain again.

2.

Rinse and spin dry spinach. Rinse and halve the tomatoes. Rinse meat and pat dry, cut into strips.

3.

Heat oil in a pan. Cook meat on high heat for about 1-2 minutes (depending on the desired degree of doneness), season with salt and pepper.

4.

Combine sour cream with yogurt, mayonnaise, lemon juice, 2-3 tablespoons of water and sugar. Season with salt and pepper.

5.

Place beans, tomatoes, and spinach on four plates. Top with beef and drizzle with sauce. Serve.
