300 grams red Bell pepper
300 grams green Beans

1 ½ centimeters fresh ginger
3 scallions
5 Tbsps vegetable oil
100 milliliters Beef broth
2 tsps finely grated Lime zest
2 Tbsps dark soy sauce
freshly ground peppers

Preparation steps

Rinse beef, pat dry, trim and cut into strips. Rinse bell peppers, trim, cut in half, remove seeds and ribs and cut into cubes. Rinse beans, snip ends and cut into 4 cm (approximately 1 1/2 inch) long pieces. Blanch beans in a pot of boiling salted water for 2 minutes. Drain beans, rinse with cold water and drain again. Peel ginger and cut into small cubes. Rinse scallions, trim and cut diagonally into rings.

Heat oil in a deep frying pan, brown meat in portions, remove and set aside. Add bell peppers, beans and ginger to the pan and simmer for about 5 minutes while stirring. Add broth, sprinkle with lime zest and boil. Season with soy sauce, salt and pepper. Add beef and scallions, toss briefly and serve.
