For the tapenade
1 Anchovy fillet
1 tsp Caper
80 grams black Olives (pitted)
1 garlic clove (peeled)
½ tsp honey
2 Tbsps olive oil
freshly ground peppers
1 splash lemon juice
For the burger
400 grams Ground meat (beef)
1 egg yolk
1 Tbsp breadcrumbs
2 Tbsps vegetable oil
4 Sesame burger bun
1 handful Leaf lettuce variety
1 red onion
4 Tbsps Mayonnaise
4 Tbsps grainy Mustard
50 grams Parmesan

Preparation steps

For the tapenade: Pat the anchovies dry. Place the anchovies, capers, olives, garlic and honey in a blender. Pulse until the mixture turns to a fine paste. Season with pepper to taste and the lemon juice.

For the burgers: Mix the ground beef with the tapenade, yolks, and breadcrumbs until well combined. Divide into 4 patties. Heat the oil in a skillet. Add the patties and cook until golden brown, about 3-4 minutes per side.

Cut the sesame buns in half horizontally and toast. Rinse the lettuce and shake dry. Peel, halve and slice the onion. Mix the mayonnaise with the mustard in a small bowl. Thinly slice the cheese.

Spread the base of the sesame buns with the mustard mixture. Place a beef burger on top. Arrange the cheese, lettuce and onions on top of the burger and enclose with the top half of the bun.
