- barley cookie
- 60 grams Barley flour
- 1 Tbsp ground Hazelnuts
- 1 chopped shallot
- 1 Tbsp milk
- 2 Tbsps grated Edam cheese
- 1 tsp vegetable oil
- salt
- freshly ground peppers
- ½ tsp sweet ground paprika
- 2 mid-sized Sweet potato
- ½ Oak leaf lettuce
- 25 grams Bell pepper
- 2 tsps diced shallot
- 1 Tbsp cream cheese
- 1 Tbsp Corn kernel (from a jar)
- salt
- freshly ground peppers
- 1 tsp Mustard
- 1 tsp scallions

Preparation steps

Soak the barley meal overnight in water and strain the next day. Mix the soaked and strained barley meal with crumbled barley cookies, ground hazelnuts, shallot, milk, edam cheese, and paprika, and season with salt and pepper. Form small patties from the barley mixture.
Fry the patties in a pan in hot oil from both sides.

Cook the sweet potatoes in boiling water for about 25 minutes. Drain and peel.
Rinse and cut the oak leaf lettuce.
For the salad, mix together the bell peppers, shallots, cream cheese, corn kernels, mustard and chives, and season with salt and pepper.
Serve the barley patties with the salad placed in oak leaf lettuce.
