Lettuce and Beet Leaf Salad

- 4 handfuls Lettuce
- 1 handful fresh, baby Beet Greens (from greengrocers)
- olive oil (cold pressed)
- balsamic vinegar
- freshly ground peppers
Rinse the lettuce and beet leaves and shake dry. Tear into smaller pieces if necessary and mix together in a large bowl.
For the dressing, mix 5 tablespoons of olive oil and 3 tablespoons of vinegar. Season with salt and pepper and drizzle over the salad before serving.
Suggestion: Serve showered with grated Parmesan.
