200 grams softened low-fat butter
200 grams brown sugar
4 eggs
1 pinch salt
300 grams Pastry flour
100 grams ground Hazelnuts (substitute almonds)
1 tsp Baking powder
1 tsp baking soda
75 grams Yogurt (0.1% fat)
2 Banana
2 Tbsps lemon juice

Preparation steps

Grease the loaf pan with butter and sprinkle with flour. Preheat the oven to 180°C (approximately 350°F).

Beat the butter and sugar until fluffy. Separate the eggs. Beat the egg whites with a pinch of salt until stiff. Gradually beat the egg yolks into the butter mixture. Mix the flour, nuts, baking powder and baking soda. Sift the flour mixture into the butter mixture and mix well. Peel the banana. Puree the banana with the lemon juice and yogurt. Mix into the batter until smooth. Fold in the egg whites.

Pour the batter into the pan and smooth. Bake for about 45 minutes, until a toothpick inserted into the center comes out clean. If the bread is browning too quickly, cover with aluminum foil.

Remove from the oven and let cool. Cut into slices and serve.
