Feel free to add other vegetables to this dish such as zucchini.

- 3 Leeks (sliced)
- 2 ⅔ cups cherry Tomatoes
- 1 cup fish stock
- 3 Tbsps dry white wine
- 4 pcs Sea bass (approx. 6 ounces each)
- 2 Tbsps lemon juice
- 2 Tbsps olive oil
Preparation steps

Heat the oven to 200°C / 400°F.

Place the leek and tomatoes in a baking dish and add the stock and the wine. Season with salt and pepper and place the fish fillets on top.
3.
Drizzle the fish fillets with lemon juice and season with salt and ground black pepper.
4.
Pour over the olive oil and cover dish with foil.
5.
Bake in a preheated oven for 20 minutes until the fish and vegetables are tender.
