½ cup dry white wine
4 Tbsps olive oil (or unsalted butter)

1 Cutting board, 1 Small knife, 1 Fork, 1 Immersion blender, 1 Peeler, 1 Citrus juicer, 1 Teaspoon, 1 Measuring cups, 1 deep bowl, 1 Small plate, 1 Plate

Preparation steps

Preheat your oven to 400 degrees F.

Rinse the fish well and pat dry. Make four diagonal cuts on each side of the fish, and season inside and out with salt and freshly ground pepper.

Rinse the parsley, pat it dry, and remove the leaves from the stems, which you can discard. Remove the needles from the sprigs of rosemary too. Mince the parsley leaves and rosemary needles, and season the fish with the herbs, inside and out.

Arrange the fish in a baking dish, sprinkle with the wine and olive oil or butter, and roast until done, 15-20 minutes; if the fish looks to be drying out, add a little more wine.
5.
Garnish with lemon, if desired and serve immediately.
