4 large potatoes
1 Tbsp olive oil

Preparation steps

Preheat the oven to 200°C (180° fan) | 400F | gas 6

Rub the potatoes with oil, sprinkle generously with salt and bake in the oven for 1 - 1½ hours until cooked all the way through.

Meanwhile slit the sausage skins and take out the meat.
4.
Heat the oil in a pan and cook the crumbled sausage meat and onions until golden. Season and stir through the parsley.
5.
When the potatoes are cooked, cut in half and scoop out the flesh, Mix with the sausage mixture then spoon back into the skins and bake for 10 minutes or until heated through and crisping on top.
