- 1 large Mango (pitted, peeled, and diced)
- 1 cilantro (chopped)
- ½ Red onion (finely chopped)
- 2 cups Vine Tomatoes (cored, seeded, and diced)
- 2 Limes
- 4 Salmon (175 grams)
- 2 Tbsps olive oil
- salt
- freshly ground Black pepper

Preparation steps
1.
Preheat the oven to 200°C(180° fan)|400F|gas 6.

Stir together the mango, coriander, onion, and tomatoes in a mixing bowl. Juice and zest one of the limes into the bowl, stirring well. Season to taste with salt and pepper.

Arrange the salmon fillets on a baking tray lined with greaseproof paper. Drizzle with olive oil and season with salt and pepper.
4.
Bake for 12-14 minutes until firm yet slightly springy to the touch.
5.
Remove from the oven and lift onto plates. Top with the mango salad and cut the remaining lime into wedges, serving them alongside the salad.
