4 fish fillets (each 180 grams, such as coley)
2 handfuls parsley
1 Tbsp white balsamic vinegar
rough Sea salt

1 Tbsp olive oil
500 grams Cherry tomatoes (on the vine)

Preparation steps

Preheat the oven to 200°C (approximately 400°F).

Rinse fish fillets and pat dry. Place each fillet on a piece of parchment paper that is about 30x30 cm (approximately 12x12 inches). Rinse parsley, shake dry, pluck leaves from stem and chop coarsely. Sprinkle fish lightly with balsamic vinegar and season with salt and pepper. Brush each fillet with a little olive oil and sprinkle parsley over fish. Rinse tomatoes, place on fillets (remove vine) and season lightly with salt and pepper. Fold the parchment paper into a packet around fish and tie with kitchen twine (or secure with toothpicks). Place fish packets on a baking sheet and bake in the preheated oven for 15-20 minutes.

Remove from the oven, open the parchment paper and serve.
