- 2 ripe Apple
- 2 Tbsps lemon juice
- 1 Goat cheese (200 grams or 7 ounces)
- 8 slices Toast
- butter (for greasing)
- 4 sprigs thyme
- freshly ground peppers
Preparation steps
1.
Rinse, peel and remove cores from apples. Cut into thin slices and sprinkle immediately with lemon juice. Cut goat cheese into 1 cm (approximately 1/2 inch) thick slices. Toast bread and using a cookie cutter, cut out circles similar to size of apple slices.

Place a slice of bread in a buttered pan and top with an apple slice and a slice of goat cheese. Rinse thyme, shake dry, pluck off leaves and spread over cheese. Season with pepper and place beneath broiler. Broil until toasted, watching carefully.

If cooking several at a time, bread slices can be lined up in a buttered baking dish, topped and then baked in a preheated oven at 220°C (approximately 425°F) for about 15 minutes. Serve warm.
