- Bell pepper (1 small, red and yellow)
- 2 small Zucchini
- 1 Baguette
- 200 grams cream cheese
- 3 Tbsps Mayonnaise
- 2 Tbsps finely chopped parsley
- salt
- freshly ground peppers
Preparation steps

Rinse bell peppers, cut in half, remove seeds and ribs and cut into small cubes. Rinse zucchini and cook in a pot of boiling salted water for 4 minutes. Drain, rinse with cold water and drain again. Rinse zucchini, pat dry and cut off the ends.

Cut baguette lengthwise, but do not cut through.

Remove some bread from inside the baguette. Puree bread pieces in a blender with cream cheese, mayonnaise, bell pepper and parsley and season with salt and pepper. Mix well.

Fill baguette with half of cream cheese mixture, cover with zucchini, spread remaining cream cheese mixture on top and cover with top half of baguette. Firmly wrap baguette with aluminum foil and let rest in the refrigerator for 3 hours. Cut into slices and serve.
