1 kilogram white Asparagus
1 lemon
1 Tbsp sugar
1 Tbsp butter
salt
2 eggs
¼ bunch Chives
2 shallots
5 Tbsps olive oil
1 Tbsp lemon juice

Preparation steps

Peel the asparagus, and trim off the woody ends. Cook in salted boiling water with half a lemon, the sugar, and butter. Cover and simmer for about 20 minutes. Cook the eggs in boiling water for 8 minutes. Remove from the pot, shock in an ice water bath, peel, and chop the eggs.

Rinse, dry, and thinly slice the chives. Peel the shallots and finely chop. Sweat in 1 tablespoon of oil. Remove from the heat, and set aside. Mix the eggs, chives, the olive oil, and lemon juice. Season to taste with salt and pepper.

Remove the asparagus from the water and drain well. Transfer to warmed plates. Top with the egg and chive vinaigrette. If you'd like, serve with a baguette.
