50 grams button Mushroom
50 grams Oyster mushrooms
6 dried Wood Ear Mushrooms
2 shallots
1 red chili pepper
1 green chili pepper
4 Tbsps Fish sauce
2 Tbsps lemon juice
1 Tbsp sugar
3 Tbsps vegetable oil

Preparation steps

Soak the jelly ear fungus in a bowl of warm water for 30 minutes. Lift the mushrooms out of the water, rinse, squeeze dry and cut into strips. Soak the glass noodles in cold water for 10 minutes, lift the mushrooms out of the water and cut small with scissors. Clean the champignons and oyster mushrooms and cut into slices. Peel and finely dice the shallots.

Rinse the chile, slit lengthwise, remove the seeds and white ribs and cut into fine strips.

Heat the oil in a skillet and saute the mushrooms until tender. Add the ground beef and cook, stirring until crumbly. Add shallots and chilies and saute 1 minute. Add the noodles, mix well and saute 2 minutes. In a bowl, stir together the fish sauce, lemon juice and the sugar and stir into the pasta mixture, season with salt and serve in a bowl.
