- 200 grams wide Rice noodles
- 3 garlic cloves
- 3 shallots
- 3 Red chili peppers
- 2 green chili peppers
- 2 sprigs Thai basil (leaves)
- 250 grams Beef fillet
- 3 Tbsps sesame oil
- salt
- 3 Tbsps Oyster sauce
- 1 Tbsp sugar
- 1 Tbsp White vinegar
- 1 tsp granulated Broth
Preparation steps
1.
Soak rice noodles in a bowl of warm water for about 10 minutes, drain and cut noodles into 15 cm (approximately 6 inches) long pieces.

Peel shallots and garlic and coarsely chop.
3.
Rinse chile peppers, remove seeds. Crush 2 red chile peppers and green chile peppers with shallots and garlic in a mortar or puree in a food processor.

Remove seeds from remaining red chili pepper and coarsely chop.
5.
Cut beef fillet into thin strips.
6.
Heat oil in a wok or frying pan and fry chile pepper mixture while stirring until fragrant. Then add meat and remaining chile pepper, fry briefly while stirring, add rice noodles and season with oyster sauce, salt, sugar, vinegar and granulated broth. Add some water if necessary.
7.
Add basil leaves, stir and serve immediately.
