- 250 grams Glass noodles
- 1 Lettuce
- 250 grams Beef
- 4 scallions
- 200 grams Snow peas
- 1 red chili pepper
- 1 garlic clove
- 1 pc ginger (5 grams or .2 ounces)
- 1 Tbsp sesame oil
- 2 Tbsps Rice vinegar
- 2 Tbsps soy sauce
- salt
- ground cilantro
Preparation steps
1.
Prepare noodles according to package instructions, drain.
2.
Rinse and spin dry lettuce and tear into bite-sized pieces. Rinse meat with cold water, pat dry and finely chop.
3.
Rinse scallions and slice into rings. Rinse and peel snow peas.
4.
Rinse chile, remove seeds and ribs and chop. Peel and mince garlic Peel and grate ginger.
5.
Heat oil in a pan. Cook garlic, ginger and chile until soft over medium heat. Add meat and cook until crumbly, about 1-2 minutes.
6.
Add scallions and peas and cook for another 3-4 minutes. Season with rice vinegar, soy sauce, salt and coriander. Remove from heat and let cool until lukewarm.
7.
Combine noodles, lettuce and meat mixture. Distribute onto 4 plates and serve.
