- 6 scallions
- 2 centimeters ginger
- 1 shallot
- 1 sprig Lemongrass (white part only)
- 2 Tbsps sesame oil
- 400 grams Ground meat (mixed)
- 500 grams green Udon Noodle (or regular)
- 1 Tbsp Lime juice
- 4 Tbsps soy sauce (dark)
- Szechuan pepper

Preparation steps
1.
Rinse, trim and finely chop the white parts of the scallions. Thinly slice scallion greens crosswise and set aside. Peel and finely chop ginger and shallot. Very finely chop lemongrass. In a pan, sauté lemongrass with shallot, ginger and chopped scallions in hot oil until translucent. Add ground meat and stir-fry until browned and crumbly, about 5 minutes.

Cook udon noodles according to package instructions.

Season ground meat mixture with lime juice, soy sauce and Szechuan pepper to taste. Divide meat over noodles and garnish with reserved scallion greens.
