2 garlic cloves
3 Tbsps sherry
2 Tbsps soy sauce
½ tsp brown sugar
1 Tbsp vegetable oil

Preparation steps

Rinse trout inside and out with cold water, pat dry. Cut trout at the top three times diagonally and season inside and out.

Rinse scallions and slice green rings. Peel and thinly slice ginger root. Peel and mince garlic. Combine cherry, soy sauce, sugar and oil. Stir in ginger and garlic. Cover the bottom of a fish cooker with water. Place the trout on the strainer and cover with scallions and marinade. Seam trout for about 15 minutes.

Debone trout and plate. Serve, as desired, with boiled rice.
