- For Trout
- 1 small Steelhead trout (about 80 g)
- salt
- peppers
- 1 lemon (juice)
- grapeseed oil
- For the salad
- 1 Romanesco broccoli
- 1 Radicchio
- 1 bunch Watercress
- 1 bunch Dill
- 1 bunch Basil
- salad dressing
- salt
- peppers
- 4 Tbsps grapeseed oil
- 2 Tbsps White vinegar

Preparation steps
1.
Cut trout into thin slices. Season with salt and pepper and drizzle with lemon juice and grapeseed oil. Cover, and marinate 1 hour in the refrigerator.
2.
Rinse and spin salad greens dry. Thinly slice radicchio and basil. Cut romanesco into bite size pieces.
3.
For the salad dressing: Whisk all ingredients together and season with salt and pepper.
4.
Arrange the trout slices on a plate with the salad and drizzle with dressing.
