Preparation steps

1.

Rinse the ribs, pat dry and place in a shallow dish.

2.

For the marinade, peel the garlic and squeeze into a small bowl. Cut the lemon into thin slices. Rinse, halve and finely chop the chile peppers. Stir chopped chile peppers with the ginger, garlic, lemongrass, cilantro, cinnamon, 5-spice powder, honey, soy sauce, brown sugar and oil. Cut 1 lemon into slices, squeeze the juice of the second lemon and mix both with the marinade. Pour marinade over ribs, cover and refrigerate preferably overnight, but at least 4 hours.

3.

Remove the ribs from the refrigerator about 30 minutes before grilling. Drain marinade from ribs and place marinade in a pot. Place well-drained ribs on the preheated grill and cook, turning frequently for about 45 minutes, basting frequently with the marinade. Remove the ribs from the grill and divide into individual ribs on a cutting board. Brush with marinade and reheat ribs on the grill. Then season with salt and serve.
