Zucchini Salad with Mozzarella
Rinse and trim the zucchini and cut lengthwise with a vegetable peeler into very thin slices.
For the dressing, mix the lemon juice with the olive oil and season with salt and pepper.
Rinse the herbs, shake dry and chop finely.
Mix the zucchini with the dressing and stir in the herbs. Cut the mozzarella into pieces and distribute over the salad before serving.
