250 grams mixed Lettuce (such as Frisée, Batavia, sorrel)
200 grams Snow peas
2 carrots
300 grams Bocconcini
4 Tbsps grapeseed oil
3 Tbsps white balsamic vinegar
2 Tbsps Pine nuts
1 pinch sugar

Preparation steps

Rinse lettuce, spin dry and tear into small pieces. Rinse snow peas and peel. Peel carrots and cut diagonally into thin slices. Blanch carrots and snow peas for 1-2 minutes in boiling salted water. Drain, rinse with cold water and drain again. Mix carrots and snow peas with lettuce leaves and arrange on plates.

Toast pine nuts in a dry skillet and let cool.

For the dressing, mix balsamic vinegar with grape seed oil and sugar in a bowl until smooth. Season with salt and pepper. Spread mozzarella over the salad, sprinkle with pine nuts and serve drizzled with the dressing.
