2 large Zucchini
salt
2 scoops Mozzarella (each 125 grams)
250 grams Cherry tomatoes
1 bunch Basil
1 Red chili pepper
2 garlic cloves
3 Tbsps White vinegar
100 milliliters olive oil
freshly ground peppers

Preparation steps

1.

Rinse zucchini, trim and cut lengthwise into thin slices. Sprinkle with salt and let stand for about 20 minutes.

Drain the mozzarella and cut into bite-sized cubes. Rinse the tomatoes, pat dry and cut in half.

3.

Rinse the basil, shake dry and pluck off the leaves.

Pat zucchini slices dry and place 2 slices overlapping one another.

Lay a mozzarella cube, 2 tomato halves and 1 basil leaf on the zucchini and roll the zucchini slices. Repeat with remaining ingredients. Secure rolls with toothpicks and place in a glass bowl  with any remaining basil leaves.

6.

Rinse chile pepper, cut in half lengthwise, remove seeds and cut into narrow strips. Peel the garlic, cut into thin slices and mix with the chile pepper, olive oil and vinegar. Season with salt and pepper.

7.

Brush marinade on the rolls and marinate for about 2 hours. Baste rolls often with the marinade. Serve.
