150 grams Goat cheese
lemon juice

100 grams green Olives (pitted)
60 grams mixed Seed (such as pumpkin, sunflower and pine)

Preparation steps

Rinse and trim zucchini, pat dry. Cut 8-12 thin slices lengthwise from the center parts of zucchini. Season with salt and pepper. Heat 1 tablespoon of oil in a nonstick pan and cook zucchini slices until golden brown on both sides. Arrange on a plate and cool, drizzle with balsamic vinegar. Cut remaining zucchini into small cubes. Peel garlic and chop finely. Heat remaining oil in a pan and saute zucchini cubes and garlic for 1-2 minutes. Remove from heat and let cool slightly. Add goat cheese and season with salt, lemon juice, pepper and chili powder. Place mixture in the center of zucchini slices and roll up. Secure with toothpicks and arrange about 2-3 rolls per plate.
