- 1 ⅓ cups sheep cheese (diced)
- 2 handfuls parsley (finely chopped)
- 1 handful Dill (finely chopped)
- mild paprika
- 3 ½ ozs phyllo pastry (filo)
- 1 egg white
- vegetable oil (for deep frying)

Preparation steps
1.
Mash the cheese with a fork, stir in the herbs and season with ground black pepper and a pinch of paprika.
2.
Unroll the filo pastry sheets and cut into quarters using a sharp knife. Cut each piece diagonally to make triangles. Brush the edges with egg white. Place 1-2 tsp of the cheese mixture on the wide edge of the triangle, fold in the sides and roll up into narrow rolls.
3.
Heat the oil in a wide-based pan and fry the rolls for 3-4 minutes until golden brown. Drain on kitchen paper and serve hot, with a tomato & basil dip if desired.
