- ⅔ cup Feta (crumbled)
- 1 cup goat cream cheese
- 2 sprigs fresh thyme (leaves removed and chopped)
- 4 Chives (sliced)
- 1 shallot (diced)
- 1 clove garlic cloves (diced or crushed)
- lemon juice
- 8 piquillo pepper (fresh or preserved, hollowed out)

Preparation steps
1.
Crumble the feta into a bowl and mix well with the cream cheese. Stir in the thyme, chives, shallot and garlic and season with salt, ground black pepper and a dash of lemon juice.
2.
Fill the peppers with the cheese mixture, arrange on plate and serve garnished with thyme, chives and ground paprika.
