- For the wild garlic spinach
- 500 grams fresh Spinach
- 125 grams Wild garlic leaf
- 1 garlic clove
- 4 Ramsons (when available)
- 1 Tbsp butter
- 2 Tbsps olive oil
- salt
- freshly ground peppers
- cayenne pepper
- Nutmeg
- 2 tsps lemon juice
- For the fish
- 4 ready to cook fish fillets each 160 grams (such as red mullet)
- 1 Tbsp butter
- 1 Tbsp olive oil
- salt
- freshly ground peppers
- Pastry flour (for dusting)

Preparation steps
1.
For the wild garlic spinach, rinse spinach, trim and drain. Rinse wild garlic and coarsely chop. Peel garlic and squeeze through a press. Peel wild garlic bulbs and chop as needed.

In a saucepan, heat butter and olive oil, sauté garlic and wild garlic bulb briefly, add spinach and wild garlic leaves, cover, cook over medium heat for about 4 minutes and season with salt, pepper, cayenne pepper, nutmeg and lemon juice.

For the fish, season fillets with salt and pepper and sprinkle with a little flour. Heat oil and butter in a pan and fry fish on each side for 2-3 minutes.
4.
To serve, arrage the wild garlic spinach on warmed plates and place fish fillets on top.
