Wild Garlic and Spinach Salad
Ingredients
- For the salad
- 4 eggs
- 200 grams baby Spinach
- 1 handful Wild garlic
- 100 grams Radish
- 100 grams button Mushroom
- 150 grams Cherry tomatoes
Preparation steps
Cook the eggs for 8-10 minutes in boiling water. Rinse under cold water, and cool completely. Peel the eggs and cut into wedges.
Rinse the spinach and wild garlic, pat dry, and remove any thick stems. Rinse, trim, and thinly slice the radishes. Clean the mushroom and thinly slice on a mandoline. Rinse the tomatoes and cut into quarters.
Mix the spinach, wild garlic, radishes, mushrooms, and tomatoes in a large bowl. gently fold in the eggs. Arrange the salad on plates.
For the dressing, rinse the chives, pat dry, and thinly slice. Mix the balsamic vinegar, 2 tablespoons of water, the oil, and the chives. Whisk until combined, then season to taste with salt and pepper. Drizzle the dressing over the salad, garnish with the daisies, and serve.
