Fish Steak with Wild Garlic

- 1 zucchini (cut into long thin slices)
- 3 ½ ozs Sour cream
- 1 Tbsp lemon juice
- 1 handful Ramsons (roughly chopped)
- 21 ozs fresh Salmon fillet (cut into 8 equal pieces)
- 2 Tbsps olive oil
- Cress (to garnish)

Quickly blanche the courgette in boiling, salted water. Quench and drain.
Mix together the sour cream, lemon juice and a pinch of sugar and season with salt and ground black pepper to taste. Stir in the the courgette and the ramsons and leave to steep.
Fry the fish in hot oil on both sides for 2-3 min. Season with salt and ground black pepper, set aside and leave to cook completely.
Arrange the courgette and ramson mixture on plates and place the salmon on top. Serve garnished with cress.
