- 18 ozs Beef (rump)
- 2 Tbsps dark soy sauce
- 2 Tbsps sesame oil
- 2 Tbsps sweet Chili sauce
- 1 egg yolk

- 1 red chili pepper
- 1 red pepper
- 2 ⅔ cups yellow Pumpkin (flesh)
- 1 handful Ramsons (wild garlic, Allium ursinum)
- 2 Tbsps vegetable oil
- 3 Tbsps Sesame seeds

1 Cutting board, 1 Large knife, 1 Tablespoon, 1 Small knife, 1 Small bowl, 1 Teaspoon, 1 Peeler, 2 flache Plates
Preparation steps

Cut the beef into strips and put into a bowl. Add the soy sauce, sesame oil, chilli sauce and egg yolk and mix well. Marinate in the refrigerator for at least 1 hour.

Meanwhile peel and finely dice the onion. Wash the chillies, remove the seeds and inner ribs if you wish and shred the flesh. Wash, halve, core and dice the red pepper. Cut the pumpkin flesh into bite-sized pieces and cook in boiling, salted water for 6-8 minutes. Wash the ramsons, shake dry, remove the stalks and halve the leaves. Blanch in boiling water for a few minutes, then refresh in ice-cold water and drain.

Heat the oil in a wok and stir-fry the onion with the chilli, pepper and pumpkin. Take out of the wok and quickly saute the meat in the oil left in the wok. Return the vegetables to the wok, mix and heat through. Mix in the ramsons and sesame seeds and check the seasoning. Serve in bowls.
