1 Tbsp crushed peppercorns
3 Tbsps olive oil
11 ozs Green beans (topped and tailed)

Preparation steps

1.
Heat the oven to 190°C (170° fan) 375°F gas 5.

Push the lemon halves, whole garlic cloves and thyme into the cavity of the chicken. Put the chicken in a roasting tin and drizzle with the lemon juice. Season with salt and sprinkle over the peppercorns. Drizzle with olive oil.

Roast for about 2 hours, until cooked through. To test that the chicken is cooked, insert a skewer into the thickest part of the thigh and check to see if the juices run clear and there is no pink meat.
4.
Cook the green beans in a pan of boiling salted water for 3-5 minutes until tender. Drain well and season to taste with salt and pepper. Place on a serving plate and put the chicken on top.
