Preparation steps

1.

Rinse peaches, cut in half, remove pit and dice into small pieces. Mix peach with sugar in a pot and slowly bring to a boil while stirring, reduce heat and simmer about 5 minutes until peach cubes are soft. Puree peaches in a blender and chill in the refrigerator for about 2 hours.

Beat egg whites until stiff and fold into peach puree. Freeze peach mixture in the freezer freeze for approximately 4 hours while stirring every 20 minutes during the first 2 hours.

Before serving, remove sorbet from freezer and let thaw slightly. Rinse figs and cut into wedges. To serve, arrange figs in deep plates and scoop peach sorbet with a spoon and spread over figs.
