Ingredients

For the dough
150 grams Margarine (or softened butter)
100 grams powdered sugar (sifted)
1 packet Vanilla sugar
1 pinch salt
1 egg
6 egg yolks
50 grams ground Walnut
350 grams Pastry flour
For decorating
225 grams Apricot jam
150 grams powdered sugar (sifted)
2 Tbsps Rum
100 grams Walnut

Preparation steps

1.

For the dough, mix margarine until creamy. Gradually stir in powdered sugar, vanilla sugar, salt, egg and egg yolk. Mix in ground walnuts and flour until dough is smooth. Cover dough. Refrigerate for about 2.5 hours, until well-chilled.

Scoop dough and roll into walnut-sized balls and place on baking sheet lined with parchment paper. Bake in preheated oven at 160°C (fan: 140°C, gas mark 2) (approximately 325°F), 15-20 minutes.

In a small saucepan, warm apricot jam over low heat and pass through a sieve. Remove cookies from oven and immediately brush with jam. Let jam dry.

4.

Mix powdered sugar and rum into a thick icing. Brush cookies with icing and garnish with a walnut. Let icing dry. To serve, arrange cookies on a plate.
