For the waffles
150 grams butter
70 grams sugar
3 eggs
2 Vanilla bean
2 Tbsps Rum
150 grams Pastry flour
1 generous pinch Baking powder
vegetable oil (for the waffle iron)
powdered sugar (to sprinkle)
For the compote
250 grams sweet Cherries (from a jar)
2 centiliters Cherry brandy
l Red wine
20 grams sugar

Preparation steps

For the waffles: Beat the softened butter with the sugar and eggs in a bowl until fluffy. Slit open the vanilla beans, scrape out the seeds and mix them with the rum. Sift together the flour and baking powder and fold into the batter. Preheat waffle iron and brush baking surfaces with a little oil. Pour 3 tablespoons of batter onto the waffle iron, close and bake for 4 minutes or until golden brown. Repeat the process until all the batter is used. Divide the waffles into individual heart sections.

For the compote: Drain the cherries and warm with red wine, kirsch and sugar over low heat. Simmer until the sugar has dissolved. Serve compote with waffles and dust with powdered sugar.
