- For the waffles
- 125 grams Quark
- 60 grams liquid butter
- 4 Tbsps sugar
- 2 tsps grated Lemon peel
- 3 eggs
- 200 grams Pastry flour
- 125 milliliters milk
- 1 pinch salt

- butter (for waffle iron)
- For the vanilla cream
- 150 milliliters Whipped cream (at least 30% fat content)
- 100 grams Crème fraiche
- 1 Tbsp powdered sugar
- vanilla extract (to taste)
- For the garnish
- Sour cherry (from glass container)
- 3 Tbsps chopped Hazelnuts

Preparation steps

For the waffles, mix quark, butter, sugar and lemon zest together. Separate the eggs and add the yolks one by one. Fold in the flour and gradually stir in milk until smooth. Beat egg whites with a pinch of salt until stiff and fold in. Grease and heat waffle iron and make waffles according to waffle iron's instructions.

For the vanilla cream, whip the heavy cream and mix in creme fraiche, powdered sugar and vanilla flavor. Place waffles on a plate, top with vanilla cream and garnish with a cherry. Sprinkle with chopped hazelnuts and garnish with fresh mint to serve.
