- 4 small eggs
- 3 cups Broad bean (shelled)
- 1 ½ cups canned Sweet corn (drained)
- 1 cup salad Radish (thinly sliced)
- ½ cup Soy yogurt
- 2 Tbsps Dill (finely chopped)
- 1 Tbsp lemon juice
- salt
- freshly ground Black pepper

Preparation steps
1.
Cook the eggs in a saucepan of boiling water for 12 minutes. Drain well and refresh immediately in iced water.
2.
Blanch the broad beans in a saucepan of fresh boiling water for 2 minutes. Drain well and refresh in iced water.
3.
Crack and peel the eggs. Cut into quarters, discarding the egg yolks. Roughly chop the whites and place in a mixing bowl.
4.
Drain the broad beans and add to the whites along with the remaining ingredients. Stir well and season to taste before serving.
