- 1 ½ Tbsps Avocado oil
- 3 cups Broad bean
- 2 cups Snap pea
- 2 large carrots (peeled and thinly sliced on the bias)
- ½ cup reduced-fat Feta (crumbled)
- 2 Tbsps Sunflower seed
- 2 Tbsps mint (finely chopped)
- 1 Lime (cut into wedges)
- salt
- freshly ground Black pepper

Preparation steps
1.
Heat the oil in a large wok set over a high heat until hot. Add the broad beans, mange tout, carrots, and a pinch of salt.
2.
Stir-fry for 2 minutes, and then cover the wok with a lid. Continue to cook over a slightly reduced heat for 2 minutes or until the beans and carrot are tender.
3.
Add the feta, sunflower seeds, and mint, and toss well. Season to taste with salt and pepper.
4.
Spoon into bowls and top with lime wedges before serving.
