- 18 ozs Broad bean (podded weight)
- 4 Tbsps olive oil
- 8 shallots (sliced)
- 4 slices Pancetta (roughly chopped)
- lemon juice (from 1/2 a lemon)
- 2 scallions (green parts only; chopped)
- 1 handful Basil
- Ricotta cheese (to serve)

1 Pot, 1 Cutting board, 1 Large knife, 1 Small knife, 1 Tablespoon, 1 Teaspoon, 1 Wooden spoon, 1 Slotted spatula, 1 Grill pan, 1 Lid, 1 Steamer basket, 1 Small skillet
Preparation steps
1.
Boil the broad beans in salted water until just tender then carefully remove the skins.
2.
Meanwhile, heat the oil in a frying pan and gently cook the shallots until soft. Add the pancetta and continue cooking until the pancetta is crisp and the shallots are golden brown.
3.
Mix the beans into the shallot and pancetta mixture, add the lemon juice and season with salt and pepper.
4.
Place the salad onto serving plates and scatter over the spring onions and basil leaves. Serve with ricotta, seasoned with salt and pepper and a little olive oil, alongside.
