Vegetarian Waldorf Salad
Celeriac helps to soothe an upset stomach, because the essential oils and bitter substances contained can neutralize excess stomach acid. In addition, essential mustard oils counteract bacteria, viruses and fungi and thus support our immune system.
The Waldorf salad is a classic from the USA, but it is also very popular here. No wonder, because the combination of spicy celery and fruity apple tastes delicious. Serve the Waldorf salad as a side dish with grilled food or as a main course with a slice of bread.
Rinse and peel celery root, cut into thin sticks. Blanch in boiling salted water for a few minutes, drain, rinse in cold water and drain again. Peel onion and chop finely. Rinse and core apples, cut into thin sticks.
Squeeze lemon juice and combine with apples. Combine all salad ingredients and season to taste, let stand for 30 minutes. Rinse and spin dry lettuce leaves and arrange on plates. Top with salad and serve.
