Ingredients
2
large Tortillas (10-inches)
4 tablespoons
Pesto (store bought)
1
large, ripe Avocado (thinly sliced)
½ cup
fresh mozzarella cheese (thinly sliced)
4 sprigs
fresh Basil (to garnish)
light Sour cream (to serve)
Tomato salsa (to serve)

Preparation steps

1.
Spray a large skillet with nonstick cooking spray and place over medium-low heat. Arrange one tortilla in the skillet. Spread a thin layer of pesto over the entire tortilla. Arrange sliced avocado over the top of the pesto, followed by the sliced mozzarella. Top with remaining tortilla.
2.
Increase heat to medium-high. Cook tortilla on both sides until nicely browned. Using a sharp knife or a pizza cutter, slice in half and into wedges. Transfer to serving plates and garnish with fresh basil sprigs. Serve with light sour cream and salsa.
